German fern, ostrich fern, fougère-à-Étruche matteuccie

Matteuccia struthiopteris , known as German fern , of Ostrich fern , of Matteuccee Fougère-in-United States [ 2 ] , Entruche to fern [ 3 ] or violin head [ 4 ] , is a kind of ferns by the family of Dryopteridaceae that we meet in the temperate regions of the northern hemisphere.

Sterile fronds, in the shape of ostrich feathers measuring 0.6 to 2 m length and 12 to 25 cm Width, are oblanceolate. They shrink suddenly at the base and they surround the fertile fronds. The tail of the sling has a deep groove. In the spring, the young buttons of this fern carry golden scales [ 2 ] , [ 4 ] .

Fertile fronds are much shorter than sterile fronds. They measure from 30 to 50 cm length. The greenish fertile fronds become dark brown at maturity. They are the only ones to persist during the winter. [ 2 ] , [ 4 ] .

This species remains classified, according to the different indexes, in three different families: Dryopteridaceae (W3-Tropicos, GRIN), Woodsiaceae (Thread), Onocleaceae (?), And in two different kinds: Onoclea (W3-Tropics and IPNI) and Weather in Matteuccia (Grin), not to mention the multiple synonyms since abandoned: Osmunda Struthiopteris L. – 1753 ; Struthiopteris German Willd. – 1809 …

This species is widespread throughout the northern temperate hemisphere:

The species has not yet been evaluated on a global scale by the IUCN. In Europe it is classified as non -worrying [ 7 ] .

In France it is considered vulnerable ( Vu ) by the INPN, it is evaluated vulnerable in Alsace.

Young shoots are consumed in northeast North America under the name of Têtes-de-Violon [ 8 ] , [ 9 ] .

According to the ethnobotanist François Couplan, the sticks are edible cooked [ ten ] ; In Japan, say Kusasotetsu , they are eaten boiled then transformed into donuts (tempura) or slowly cooked in a soy sauce [ ten ] .

Young buttons are cooked like a green vegetable and they have several food uses. They can be jumped in the pan in butter, or even put in a salad [ 4 ] .

It is recommended to pick no more than a third of the sticks on the same crown to ensure the survival of the species because it can be picked in too large quantities can be harmful for populations [ 4 ] .
